Method

Finely dice the garlic with the parsley and mix with salt and pepper

In a bowl hydrate the oregano with the vinegar and chilli flakes to let them bloom (3mins)

Mix in the paprika and the parsley and garlic

Pour in the Olive Oil and mix – do not blend!

This will keep in the fridge for 2-3 weeks in a sealed container
