Method

Cut the lamb rack into individual chops and combine with the yoghurt, seasoning, garlic and mint. Marinate in the fridge at least 4 hours, ideally overnight.

Mix the dip: combine the hung yoghurt, mint, parsley, lemon zest and juice, garlic, Old Bay and seasoning. Adjust the salt and reserve.

Heat a chargrill until smoking hot. Char the chops on both sides for 6-8 minutes until blackened outside and light pink within. Season with extra Old Bay and drizzle with olive oil.

Serve with the yoghurt dip and a charred lemon.
