Method

Preheat the oven to 210°C. Roast the onions, fresh and ancho chillies and tomatoes 30 minutes until blackened, then blend with the garlic, vinegar, salt, cumin and coriander to a smooth paste.

Brown the lamb shanks well in an oven-proof casserole with oil. Add the spice paste and beef stock and stir, then top up with the lager and remaining stock.

Braise in the oven 2 hours until the meat falls off the bone. Remove the bones and sinew and shred the meat.

Warm a non-stick pan with a dash of oil. Add 4 tortillas at a time, sprinkle half of each with mozzarella, add lamb and red onion, fold and fry until crisp. Keep warm while you fry the rest.

Garnish with red onion, lime and coriander and serve with a pot of the braising juices for dipping.
