Method

In a large non-stick pan with the oil, brown the mince all over. Add the bacon, onion, garlic and grated carrot and cook 3 minutes until softening.

Season with salt, add the tomato paste, bay, thyme and parmesan rind and cook 2 minutes. Add the red wine and reduce by half, then add the beef stock and chopped tomatoes.

Cook over a medium heat 15-20 minutes, stirring so it doesn't catch. Adjust the seasoning and remove the parmesan rind, thyme stalks and bay.

Boil the rigatoni in salted water 12 minutes, drain into the sauce, mix through and serve in warm bowls with grated parmesan.
