Method

In a large non-stick pan with the oil, brown the lamb mince all over. Add the onion, garlic and carrot and cook 3 minutes until softening.

Season, add the tomato paste, bay and thyme and cook 2 minutes, then add the flour and peas and mix.

Add the white wine and reduce by half, then add the chicken stock and reduce 2 minutes. Season with Worcestershire and soy and rest off the heat.

Steam the potatoes 20 minutes until soft. Preheat the oven to 200°C. Mash to a rough consistency, then fold in the pecorino and egg yolks.

Spread the mash over the meat in a baking tray, rough up with a fork and bake 30 minutes until golden and crispy. Rest 10 minutes before serving.
