Method

Ensure the oil is in a high-sided frying pan and hot before you begin along with a dry frying pan over a medium high heat. Firstly place the walnuts in the dry frying pan and toss until golden add the butter and allow to bubble in the pan until golden. Deep-fry the quinoa for a couple of minutes until golden and crisp. Remove with a fine-meshed sieve, drain on kitchen paper and season lightly.

In a large bowl combine the dressing ingredients and add the sprouts. Use a julienne peeler or mandolin to julienne the apple and add to the sprouts along with the quinoa. Add the butter and walnuts from the pan.

Thinly slice the spring onions, chop the herbs and add half of them also along with half the parmesan. Toss through to coat everything in the buttery dressing and season well to taste.

Serve on a platter topped with the remaining herbs and parmesan.
