Bacon and cabbage has to be the quintessential Irish Sunday dinner — it always was in our house — so this is me elevating a classic with a sweet pineapple glaze and a little pinch of spice. Boiling the ham first is the trick: it stays moist and succulent, then picks up the extra seasoning of charcoal and applewood smoke on the grill. When the glaze hits the pot — honey, brown sugar, pineapple juice, Worcestershire sauce, cayenne, cinnamon and cloves — it smells like Christmas. And the charred, chilli-lime cabbage alongside proves this humble veg deserves better than being served mushy.
