You might think of a juicy shawarma as the end-of-the-night meal, but it's actually pretty great for getting a party started too — whenever I've friends over, this is top of my menu. A traditional shawarma is spiced meat stacked on a rotisserie, and it's super easy to replicate on the barbecue: no rotisserie at home, no problem — grab a pineapple, skewer your chicken thighs (or portobellos for the vegetarian guests) between two thick slices, and you've built yourself a spit. It makes a proper centrepiece for a party, and nothing goes to waste — the pineapple gets diced into the pittas at the end, its sweetness bouncing off the tangy, spicy meat.
