A note from Eva
This is the mild, golden chip-shop curry so many of us grew up on, made properly at home in under half an hour. The character comes from the spice blend — madras curry powder rounded out with five spice, turmeric and ground ginger — bloomed in the pan with the chicken so it smells right before any stock goes in. Finished with a starch slurry to the thick, pourable consistency you remember.
