The last adventure of the series brought me full circle, home to Dublin — and after a day that took in the Guinness Storehouse and an evening of song at St Patrick's Cathedral, I set up my mobile kitchen at a spot just shy of three centuries old to cook up a real city favourite. Coddle is what Dubliners made to use up the week's sausages and rashers: everything gently coddled together in one pot until the potatoes are soft and the sausages have given their savour to the broth. It's pale and humble to look at, but it's honest, filling and hard to beat on a chilly Dublin evening.
