Kung Pao is a Sichuan classic and this version keeps its backbone: dried chillies and Szechuan peppercorns bringing that distinctive numbing, tingly heat, cut through with a sweet-and-sour sauce of black vinegar, soy and cane sugar. Toasted cashews go in for crunch, marinated chicken thigh stays juicy, and the whole thing comes together in one wok in minutes. Fair warning - it's meant to have a kick.
