Picture this: you want a dinner that's hearty but not too heavy — this one has you covered. A coriander, fennel and garlic salt rub goes on the lamb shoulder, the foil goes over, and 4–5 hours later the meat is falling off the bone. While it roasts I make three easy fresh sides to cut through all that meaty goodness — lemony red onions, pickled cucumber and a silky aioli. The side cut you pick at while carving? Chef's privilege.
