We couldn't do a whole episode on mushrooms without stuffing a few of them and serving them alongside a great steak — this is my kind of Saturday night dinner. Large portobellos are perfect for stuffing: they hold their shape and soak up loads of flavour, like little flavour sponges. The filling is all about balance — sharpness and richness from the Cashel Blue, a bit of heat from the nduja cutting through, and the earthiness of the mushrooms underneath — while the steak itself is kept simple: good seasoning, high heat and proper colour.
