Tiramisu means 'cheer me up' in Italian, and this version does it with Vietnamese coffee, which has a wonderfully chocolaty smell and a rich, smooth flavour — traditionally dripped through a little metal phin filter onto sweetened condensed milk, the way millions of people in Vietnam drink it every day. I bake my own thin sponge rather than using ladyfingers, because I think it soaks up the coffee a little better and I can cut it to the exact shape I want. Just plan around the six to eight hours it needs in the fridge — this is a proper 'here's one I made earlier' cake.
